- 4 4 oz bonless pork chops
- 1/2 cup sugar free orange marmalade
- 1.5 tablespoons chopped fresh cilantro
- 1 tablespoon minced pickled jalapeno peppers
- 1 tsp mild sauce (Taco Bell) or tobasco sauce
- Salt & pepper for seasoning pork
- Heat skillet to medium-high heat and spray with cooking spray. Season the pork w/ salt and pepper, and then cook covered in the skillet, about 3-4 minutes/side.
- Meanwhile, mix the marmalade, cilantro, jalapenos, and hot sauce in a bowl and set aside.
- Remove pork from pan, and add orange marmalade mixture to the pan. Simmer, stirring frequently, 1-2 minutes or until mixture thickens and reduces slightly.
- Return pork chops to pan and cook covered for 2-4 more minutes or until tender but still slightly pink in the middle. Spoon glaze over the pork.
